Chocolate Veggies???

What in the world do
chocolate and vegetables
have to do with one another......


Well first let me digress a little,
I mentioned in another
post about my neighbor Chip,
who has a great garden
and keeps me supplied
with fresh veggies.

Not wanting to let any of this
fresh produce spoil
I've started searching
the Internet for ideas on how
to use it.

That's how I found........

Chocolate Zucchini Muffins


That's right, you're going to turn
your green zucchini veggies
into this
(and don't turn your nose up until
you try them)

I wouldn't steer you wrong, these are really good!!!!

First find yourself a bar of your
favorite dark chocolate


I choose Lindt's "Chilli" Dark chocolate
because I'm a Texas gal and I
like to spice things up
but for those of you who are not
Texas Tough
you can use any kind of dark chocolate

Next, preheat your oven to 350
and grease a muffin pan

Now mix the following in a large bowl
2 cups flour
1/2 tsp salt
1-1/2 tsp cinnamon
1 tsp baking soda

Set this aside for the moment


In a separate bowl beat 3 eggs and 1 cup brown sugar
on medium speed for about a minute,
slowly add 3/4 cup vegetable oil and 1 tsp vanilla, continuing
to beat at medium speed, now slowly add
2 cups shredded zucchini,
and yes you are still mixing

Now it's time to grab that bowl you set aside

 Turn your mixer to low and add
4 oz of melted dark chocolate
and your dry ingredients 
and continue mixing
until it's all combined 

Drop spoonfuls into muffin pan
until 3/4 full,
Bake for approximately
20-25 minutes


My batch made two dozen
so I'm off to share some
with the neighbors

......but plan on keeping some
for yourself
because they are a really
yummy, healthy snack!!
